A repeated dynamic throughout history, which seems to enable a culture, to be clueless to the questionable ways at which late Artists conduct their Lifes, but rather retain profound respect for their freedoms of expression, as Art form.

Lemon-Lime Mousse

~~Lemon-Lime Mousse~~~
(Serves 8)
generous 1-2/3 cups (40 cl) heavy cream
1- 1/2 (350 g) granulated sugar
14 eggs
1-1/2 tablespoons (12 g) gelatin
5 tablespoons cold water
zest of 3 lemons-2 limes
7/8 cup (20 cl) lemon juice
1 Genoese cake
7/8 cup (200 g) raspberry sauce
a few candied lemon peels, sliced thin
Fresh mint leaves (optional)
How-to:
Separate the egg yolks from the whites. Beat the yolks with a scant 1/2 cup sugar, the lemon juice, and the lemon zest.
Bring the cream to a boil then pour it little by little onto the yolk and sugar mixture, whisking constantly. Place the mixture over moderate heat, and boil, whisking for 2 minutes. Dissolve the gelatin in the water. Remove the cream mixture from the heat, stir in the gelatin, and reserve.
Beat the egg whites until they are very stiff, then beat in the remaining sugar. While the cream is still warm, fold in the egg whites.
Cut the Genoese cake into three (horizontally) so as to have three thin layers. Place one layer in the bottom of a soufflé mold or a flan ring 3 inches high and spread with half of the lemon mousse. Cover with a second layer of cake and cover with the remaining mousse, then place the third piece on top and refrigerate for 2 to 3 hours.
Tip 1: To serve, turn out the cake (or remove the flan ring) and cut it into individual servings.
Tip 2: Add the candied lemon peal, and if desired, fresh mint leaves alongside!

By now, I hope a majority are safe from the storm. In an article I posted last week (regarding the latest testing within the eye of a hurricane) I believe we are right on the verge of a much needed technological breakthrough towards pin-pointing the exact landfall 'stage' of each hurricane, thus to reduce much of the fear and panacea, left in the wake of a storm.
I do hope these people would have left last month. God bless... image.

Soufflé aux Baies!
Soufflé aux Baies...(Serves 4)
"Learning to master the art of making a soufflé, is a gift you should give yourself. With this mastery, you will make cheese, spinach, and numerous types of soufflé." ~M.B.
6- 1/2 tablespoons (10 cl) milk
3- 1/2 (45 g) granulated sugar
3 tablespoons (30 g) flour
4 egg yolks - 3 egg whites
1/2 pint (100 g) raspberries and baby strawberries
1 teaspoon butter - confectioner's sugar
4 whole candied raspberries (optional: added decoration)
How-to...
NOTE: Follow carefully, if it is your first soufflé:
Boil the milk. Beat the egg yolks and 3 tablespoons of sugar until the mixture becomes lemon-colored, then whisk in the flour and the hot milk little by little. Pour into a saucepan and cook over a moderate heat 2 minutes or until thick, then pour this pastry cream into a bowl and reserve.
Puree the mixed berries (raspberries and baby strawberries)Butter a soufflé mold; sprinkle the inside of the mold with the remaining sugar to coat the sides then fill with the mixed-berry cream up to the edge of the mold. Bake in a 476 degree F (250 degree C) oven for 15 to 16 minutes.
..And strain the juice.
Beat the egg whites until quite stiff stir in the mixed-berry juice, and then carefully fold this into the bowl, of pastry cream.
Remove from the oven, sprinkle with confectioner's sugar
(as I've done here)
You may choose to serve with stewed raspberry and baby strawberries, flavored with a little Grand Marnier and red currant jelly! (Candied raspberries for Deco; is nice touch)...... Viola!
Tip: 1. Bring these to their equivalent: stiffen egg whites, carefully fold into pastry cream.
Tip: 2. Remember it's "layers" and watch your temperatures.

Story of La Donna

For a year, I painted a body of work which later exhibited, to be sold along with an Italian Sculpture’s work. As I painted an image would emerge on each of the 12 canvases...sometimes in the background, on the edge of the canvas, or here (above) in the middle ground.
“I called her, “La Donna”...
The Story: A London friend invited me to enjoy music, dinner, and to meet a special friend. As we arrived, the evening sounds filled tall ceilings, and the chants of cheerful voices, sang to the beautiful melody of sitars, drums, and tambourines.
Suddenly projected before us from their screen, was a satellite image from India. A woman emerged onto the screen to speak. I turned my head, thinking that I had seen her before, but not exactly sure…
Until she spoke...
I was astonished... It was, without question, La Donna! (^_^)

TODAY: 12.5 million Afghans go to the polls in the first parliamentary elections in three decades.
UPDATE: Sept 19th| Kabul, Afghanistan-
SMH- Word is discouraging, but hopes to be the opposite. Opinion says that it looks like the new parliament could be elected by as few as 20 per cent of voters, by adaptation of (rarely used) SNTV electoral system. This system consists of a single non-transferable vote - to choose a single candidate in fields of up to hundreds for no more than a dozen parliamentary seats in most provinces.
Largest population: Kabul, there are 33 seats - with a field of 389 candidates. To continue with senior analysts finding, no candidate will get more than 10%... and at best, the rest will get 1% each. In 6 provinces at which there are more than ten seats, those who are elected will be no more than a combined 20% of the electorate.
When you consider the temperament of the Afghans who could possibly see a
1.1 % winner to a 1.09 loser...it's likely to be ill-received.
(Reference to the "assassination clause", which calls for the next-highest vote winner to replace any MP who dies.) A similar rule applied to the election of delegates to a national political conference in 2002 - within four hours of the announcement of the successful candidates two were assassinated.)

Instead of detailing how to prepare fresh crab, I’ll just say a few words about Gourmet cooking... (^_^)
With gourmet cooking, fast layering places quick attention towards technique, and also produces the finest in flavor. Plan the order that you will cook, and set up your measurements ahead of time, so that you will cook fast and loose. If you organize first, you will have great success.
KEY: | choose the finest fresh foods | Combine garden picked herbs | prepare with quality cooking pans.
To produce this dish, you will want to use fresh (not frozen) crab, fresh parsley, fresh butter, white vermouth, and an assortment of fine baby vegetables.
(Serves 2)
Approx. ¾ lb of your freshly shelled crab
2 clams
2 mussels
4 tiny scallops
2 baby turnips, peeled
4 baby carrots, peeled
2 baby leeks, whites only, cut into julienne strips
½ bunch chervil
½ bunch parsley
1 shallot, peeled and chopped
1 cups and 2 tablespoons (25 cl) fish stock made with the bones (removed earlier)
¾ cup (10 cl) white vermouth
¾ cup (100 g) butter, softened
Juice ¼ lemon
Salt and white pepper
Green peas and asparagus tips (a few of each)
How-to:
With fish cut, place in bowl, and refrigerate. Boil the bones to make a fish stock. Finely chop all but a few leaves of the chervil and parsley. Sprinkle the chopped herbs into a large frying pan, add the shallot, vermouth, and fish stock. Bring the liquid to a boil, then remove from heat, and allow cooling.
Cook the remaining vegetables one by one in pot of lightly salted water. The cooking time for each vegetable will be different; test them frequently and as soon as they are tender, drain and cool under cold water. Keep warm.
Poach the fish with wine-stock mixture, do not allow boiling. Same applies here, as fish cooking time will be different. First clams, mussels, and then scallops.
As each type of fish is cooked, remove them with skimmer and drain on a clean towel.
Arrange fish on the dinner plates and garnish with the vegetables.
Strain liquid through cloth, boil over high heat to reduce by half, then over low heat, whisk in the butter little by little to make a smooth sauce. Add salt, white pepper, and lemon juice (as needed.)
Place the dinner plates in hot oven to reheat fish and garnish, then spoon sauce onto plates. Sprinkle parsley and chervil over each plate, and serve immediately.
Tip: 1. Fresh shellfish is notorious for possibility of sand, so do not spoon sauce from the bottom of pan... (and watch for it!) (*,,,,,,*)
Tip: 2. Fast and loose (Don’t forget!)

(Serves 4)
2 oranges
2 peaches (optional; not used here)
2 grapefruit
12 strawberries (or so)
4 egg yolks
3 tablespoons (40g) granulated sugar
1/4 teaspoon vanilla
7/8 cup (20 cl) champagne
How-to:
Peal the oranges and grapefruit. Remove all the whitish skin, and then cut the wedges of fruit from between the membranes that surround them. Peel the peaches (if used) and pit them. Cut each strawberry in half. Arrange the fruit around the edges of four oven-proof dessert plates. Set aside.
Beat the egg yolks in a double boiler for about 10 minutes, whisking in the champagne little by little. When the sauce thickens and forms a ribbon, whisk in the sugar and the vanilla. Remove from heat. Spoon some of the sauce into the center of each of the dessert plates, and then place the plates under the broiler just long enough to brown the sauce. Serve immediately.
Tip: 1. Desert served after a light Entrée.
Tip: 2. Add a serving plate of thin dessert crackers. (^_^)

The question remains unanswered, conserning its historic value (dating back to, possibility, of as early as the 1700.) The police are calling Metzger "an idiot" for carrying the incendiary device around in his truck, then bringing it into downtown Anchorage, where they say it could have sent shrapnel flying for blocks, had it exploded.
Metzger (an Anchorage attorney) is now suing police for full replacement, of that which represents its potential archaic value. Full story here.
