"A lovely salad designed to keep you healthy this winter!" ~M.B.
(Serve w/ a nice hot cup of healthy Citrus Tea w/ honey and ginger!)
~~~Salade d'orange~~~
(Serves 4)
~2 ounces of watercress
~1 lb crisp young carrots, grated
~2 oranges peeled and segmented
Ginger Dressing
~1 inch fresh gingerroot, grated, then mix with 3-1/2 tablespoons white rice vinegar
~1/2 teaspoon wholegrain mustard
~1 teaspoon honey
~2 tablespoons Chamomile Citrus Tea (to lighten the dressing)
~Grated rind and juice of 1/2 medium orange
~3 tablespoons olive oil
~2 tablespoons toasted sesame seeds
~sea salt and freshly ground black pepper
How to:
~Prepare the dressing, mix all the ingredients until thoroughly combined, then set aside.
~Place the watercress in a salad bowl, arrange the grated carrots and orange segments on top, pour over the dressing, and Viola!
Tip 1: Prepare your dressing first, to allow the flavors to blend!
Tip 2: May be served with Hot Chamomile Citrus Tea, honey, with a slice of ginger & wedge of orange!
