"These little cookies are perfect for a party!

5-1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup sugar
1 egg and 3 egg yolks, lightly beaten
7 Tbs unsalted butter, melted
Zest of one orange and one Lemon
1 tsp. vanilla extract
1/2 cup of water
3 tbs. white rum
48 fl oz peanut oil
powdered sugar for garnish
How to:
In the bowl of a mixer combine the dried ingredients. In a second bowl
add the eggs butter, orange and lemon zest, vanilla, water, and rum.
Add the melted butter mixture to the dry ingredients and mix until
the dough just comes together. Cover and rest in the refrigerator
for 3 hours. Heat oil to 360 degrees. On a floured surface, roll
out the dough to 1/8-inch thickness & cut into 3- inch squares.
Cut a slit in the center of each and fry until golden brown.
Remove to a plate covered with paper towels.
Sift on powdered sugar, and garnish
with candied raspberries!
