Salade D'Héritage


Every year, at this time (since my childhood)
we've enjoyed these big luscious tomatoes! Although
the following recipe is easy, you might have trouble
choosing which type of tomato...
"So, choose them all!" :)
Slice, season, & add some sourdough bread...
And
"Enjoy, Salade D'Héritage!"

~Ingredients~
serves six

6-8 very ripe heirloom tomatoes of
every different color, shape, and size!
1/4 - 1/2 teaspoon sugar
2 green (spring) onions
1/4 red onion, or 1 shallot (Chopped)
2 cloves garlic, finely chopped (optional)
2 teaspoons minced fresh oregano, or to taste
~Balsamic vinegar~
Sherry vinegar (or) white wine vinegar
3-5 tablespoons extra-virgin olive oil
Coarse country bread (Or sourdough; as above)

~How to~
1. Slice the tomatoes, capture juices in bowl
2. Layer on platter, sprinkling with sugar
3. Add green onions, garlic (if using) oregano
4. Arrange as you add the above as you sprinkle
balsamic vinegar and sherry to taste
5. Drizzle with olive oil to taste.
6. Let stand until ready to serve (or up to 2 hours)
